Wood Fire Ovens

So grill master, you’ve mastered the seared steak, the slow-cooked dry-rubbed ribs, the wood-plank smoked Salmon, so now what?  What’s the next outdoor cooking challenge?  What will satisfy that caveman urge of making a big fire and cooking meat over it?  The Wood Fire Oven, that’s what.  A domed, bee-hive shaped stone oven. Are you ready for the challenge?  I know it’s a little daunting.  Yes, you will need space, wood, you might even need a contractor to properly install one in your yard.  Minor details my friend. Roasting an entire Porchetta or, flipping your own pizza’s, tossing the red hot embers and truly understanding what cooking in a 500 plus degree oven means.  It means a quick intense sear of your meats, and a dough that gets just the right amount of crispness.  As I mentioned, they come in many forms, these ovens.  Some are simple devices, complete with their own stand while others can be as elaborate as you want to spend.  You can also have them custom made for installation in your home or restaurant.  Either way, for me, it’s the next step up to my culinary arsenal.  The following are models from Forno Bravo and Mugaini, I’m sure there are others but these are definitely on my wish list.
